Simple, but Thick Tomato Sauce


Thick because it's cooked to death

olive oil
1/2 white onion - chopped
2-3 cloves garlic - smashed
1 14.5 oz. can diced tomatoes
1/4 c fresh basil chopped
1 tsp dried oregano
2 small bay leaves
salt and pepper to taste

Saute onion and garlic in olive oil till onions are soft
Add rest of ingredients and cook uncovered on medium to low for approx 20 minutes until sauce is thickened.
Remove bay leaves and serve over pasta or toasted french or sourdough bread.
